Summer nights are my absolute favorite. The lingering sun, the slow pace, the sound of our kids playing in the yard and of course the excuse not to cook.
With hot nights coming our way and an amazing selection of produce in season I decided to make some simple flatbreads that didn’t require much work my part and could be enjoyed in our backyard during the golden hour of the evening.
To make my peach and micro greens flatbread I used yellow peaches which have that perfect mix of sweet and tartness this time of year. You can substitute any stone fruit for this, and I did buy plums as well, but the peaches looked the best at my Ralph’s store that day. I also used ricotta, pesto and some micro greens
To keep things super easy I picked up this naan from Stonefire. They’re great if you don’t want to go through the steps of making your own (because hello, heat!) and also are leery of most store bought bread because of the preservatives used to make it shelf stable.
Stonefire doesn’t us any artificial preservatives and actually freezes their bread before sending it to stores to keep it fresh. When you pick it up off the shelf it’s no longer frozen and ready to use.
If you’re not familiar with naan it’s awesome because it’s a heartier flatbread and the size is usually perfect for an individual pizza or flatbread. As a parent of picky eaters it makes things easier when everyone wants something different. Which is almost always the case around here. Of course.
I quickly warmed the naan in our toaster oven for about two minutes since naan tastes best warm. We have this oven and I use it for nearly everything because it’s compact but also somehow spacious enough for cakes and pizzas. Then I spread a little bit of pesto on the naan. The rules for pesto are similar to pizza sauce here. If it looks like enough it’s probably too much.
Next I added a few spoonfuls of ricotta and spread it on top of the pesto with my favorite spreader. I original bought this for frosting cupcakes and it has been useful on many other occasions. The pesto gives a savory flavor, the peaches are sweet with a bit of acid and the ricotta balances everything out.
Next I added a generous sprinkling of micro greens. Mostly because I am always trying to sneak in green things but also to add some texture. The combination of savory, sweet and tart with the smooth ricotta totally worked! The best part was that these flatbreads look elegant enough to serve at a casual gathering but take just a few minutes to assemble.
